Preparation method
Place the egg whites and sugar in a heatproof glass or metal bowl. Place it over a bain-marie and heat over moderate heat, stirring continuously, until the sugar is completely dissolved.
Remove the bowl from the bain-marie and beat the whites with an electric mixer for about 10 minutes until stiff, glossy, and stable peaks form.
While beating the meringue, melt the chocolate in another bowl, also over a bain-marie, then let it cool slightly.
