Ingredients
Preparation method
Ingredients overview
- 90 g buckwheat flour
- 100 g almond flour
- 1 egg yolk
- 30 g honey
- 40 g butter
- 1/2 teaspoon ground cinnamon
- 1 pinch of salt
Pour the buckwheat flour and almond flour (ground almonds) onto the work surface. Make a well in the center and add the egg yolk, honey, and cold, cubed butter. Knead the ingredients by hand until the dough comes together. Shape it into a ball, wrap in cling film, and let it rest in the fridge for 30 minutes.
Preheat the oven to 160 °C (top and bottom heat).
Roll out the dough on a floured surface to a thickness of about 4 mm. Cut out shapes of your choice and place them on a baking sheet lined with baking paper. Bake for 8-10 minutes in the middle of the oven until golden brown.
Chef's tip
Use a little buckwheat flour when rolling out the dough to prevent it from sticking.
You can also decorate the finished cookies with melted dark chocolate or almond flakes.
