Peach Bellini Cocktail | Elegant Italian Refresher

Peel the peaches, remove the stones, and cut them into small cubes.

Place the peach pieces into a blender together with the freshly squeezed lemon juice, and blend into a completely silky purée. If you want a nice, clear drink, you can pass it through a fine-mesh sieve.

Divide the fruit purée between two chilled champagne glasses (flutes).
