Peel and finely chop the onion, then thinly slice the mushrooms.
In a deep pan, heat the rapeseed oil over medium heat. Add the chopped onion, reduce the heat, and sauté for 4-5 minutes until translucent.
Add the sliced mushrooms and 1 tablespoon of butter to the onion. Season with salt and sauté for another 4-5 minutes over low heat until the mushrooms soften and release their liquid.
Chef's tip
For a perfect consistency, always add the broth warm to the rice, so you don't cool down the cooking process.
