Preparation method
Sauté the finely chopped red onion in a pan with a little olive oil, crushed garlic, and freshly ground pepper until golden brown.
Add the chopped tomatoes and fresh basil, season with salt, then simmer over medium heat for about 30 minutes. Blend the finished sauce with an immersion blender until smooth.
Add the halved cherry tomatoes and butter to the sauce, then cook for another 15 minutes until the tomatoes soften and the sauce becomes silky.
Chef's tip
Burrata is best when taken out of the refrigerator 15-20 minutes before serving to reach room temperature.
