- 500 g carrots
- 2 tbsp olive oil
- 1/2 tsp garlic granules
- 1/2 tsp smoked paprika
- 3 tbsp soy sauce
- 1 pinch chili powder
- 1 tsp honey
- 1 tbsp water
- 1 pinch salt
- 1 pinch pepper
- 100 g feta cheese
- 1 handful parsley
Preheat the oven to 210 °C. Clean and peel the carrots, then cut them into diagonal slices. Place them in a small baking tray, drizzle with olive oil, sprinkle with smoked paprika, chili, garlic granules, salt, and pepper. Mix thoroughly, then bake in the preheated oven for about 25 minutes, until the carrots are tender.
Once done, remove from the oven and, while still in the hot tray, add the honey, soy sauce, and one tablespoon of water. Mix well so that the glaze coats all the carrots. When serving, sprinkle with crumbled feta cheese and finely chopped fresh parsley.
