
Pork loin in mushroom-cream sauce

Preparation method
Preheat the oven to 180 °C.
Roughly chop the red onion, slice the garlic thinly. Cut the gherkins into thin strips, and the bacon into approximately 0.5 cm cubes. Cut the mushrooms into sixths, and finely chop the capers.
Score the fatty edge of the pork loin in several places down to the meat. Season the meat thoroughly with salt and pepper on both sides. Heat oil in a pan over high heat, and sear the pork loin slices on all sides until golden brown (start with the fatty side). Set the seared meat aside on a plate.
Chef's tip
Instead of fresh mushrooms, you can use canned ones if fresh are not available.
If using capers preserved in brine, rinse them twice with clean water before use.
