Season the chicken thigh fillets on both sides, then cook them on a hot grill or in a pan until done. After cooking, let the meat rest on a cutting board for 3 minutes, then cut into slices about 0.5 cm thick.
Slice the tomatoes. Cut the jalapeño peppers into thin rings. Clean the bell pepper, remove the seeds, and cut into 0.5 cm strips. Fry the bacon until golden brown and crispy.
On one half of each tortilla, place some tomato, meat, and pepper, sprinkle with fresh coriander, and add 1 tablespoon of guacamole. Add jalapeño peppers, fried bacon, and a slice of cheddar cheese to taste. Fold the tortillas in half.
Chef's tip
You can also make guacamole at home from ripe avocados, a little lime juice, chopped onion, and coriander.
