Preparation method

Preheat the oven to 200–205 °C and prepare a baking tray or dish approximately 25 cm × 30 cm. Peel the onion, then cut it into larger cubes along with the zucchini and bell pepper. Halve the cherry tomatoes. Place the vegetables in the baking dish, sprinkle with oregano, garlic powder, salt, and pepper, drizzle with 2 tablespoons of olive oil, then mix thoroughly.

Place the dish in the 200–205 °C oven and bake the vegetables for 20–25 minutes.

Remove the dish from the oven, grate the mozzarella over the top with a large-holed grater (or tear it into pieces), then return it to the oven for another 10–15 minutes, until the cheese is nicely melted and golden brown.

Chef's tip

When serving, you can drizzle with a little extra virgin olive oil or balsamic glaze for an even more intense flavor experience.
