Preparation method
Clean the mushrooms, then cut them into thicker slices (halve or quarter smaller ones). Peel and finely chop the shallot.
Heat one tablespoon of oil in a pan and sauté the mushrooms for about 3 minutes until golden brown. Remove the mushrooms and set aside. In the remaining oil, sauté the chopped shallots until translucent, then pour in the broth and cream. Add the nutritional yeast flakes. Simmer the sauce over low heat for at least 5 minutes until it thickens.
Meanwhile, cook the pasta in salted water according to package instructions (al dente).
Chef's tip
Nutritional yeast flakes not only thicken the sauce but also give it a pleasant cheesy, nutty flavor, making it an excellent vegan alternative to Parmesan.
