Prepare the ingredients: cut the broccoli into small florets, peel the onion, then slice it thinly along with the mushrooms.
Heat the rapeseed oil in a medium pan over medium heat. Add the mushrooms and onion, season with salt, and sauté for 3-4 minutes.
Add the broccoli and baby spinach to the pan, then sauté for another 1-2 minutes. Push the vegetables to the sides of the pan to form a circle in the middle. Crack the egg into the center, season with salt and pepper, then cook covered for 3-4 minutes until the whites are set.
Chef's tip
It's a good idea to cook the rice in advance, or you can use leftover rice, which you warm up before serving.
