Preparation method
Boil the potatoes in their skins in salted water (approx. 22–25 minutes), then drain and let them cool completely. It's worth preparing them up to 12 hours in advance.
Prepare the other ingredients: finely chop the cucumber and spring onion, dice the apple into 1x1 cm pieces, and coarsely grate the carrots and boiled eggs.
Peel and dice the cooled potatoes, then place them in a large bowl. Add the Greek yogurt, peas, cucumber, onion, carrots, lemon juice, salt, pepper, apple, and egg, then mix thoroughly.
Chef's tip
The salad is even tastier if it sits in the fridge overnight, allowing the flavors to fully meld.
