- 300 g cucumber
- 200 g Greek yogurt
- 1 clove garlic
- 1 tablespoon fresh dill
- 1 tablespoon lemon juice (100%)
- 3 tablespoons extra virgin olive oil
- 1 teaspoon salt
Cut the garlic clove lengthwise in half, remove the green germ, then finely chop the clove.
Cut off the ends of the cucumber, then cut it lengthwise in half. Scrape out the seeds with a spoon, and coarsely grate the cucumber. Place it in a colander set over a bowl and salt thoroughly. Mix and let stand for 10 minutes to allow the cucumber to release its liquid.
Squeeze out the drained cucumber thoroughly, then in a bowl, mix it with the Greek yogurt, garlic, chopped dill, lemon juice, and olive oil. Refrigerate for at least 2 hours before serving to allow the flavors to meld. Stir again just before serving.
Chef's tip
For the best result, use real, thick Greek yogurt with a higher fat content.
When serving, drizzle with a little more olive oil and garnish with fresh dill or olives.
