Preparation and mixing
Peel the avocado, remove the pit, and cut it into small cubes. Thinly slice the radishes, and dice the celery stalk. Coarsely chop the mint, and finely slice the spring onion.
In a bowl, mix all the prepared ingredients (avocado, radish, celery, mint, onion). Season with salt and pepper, then place in the fridge while you prepare the rest.
Cooking and serving
Prepare the fried eggs: crack the eggs into a heated pan and fry covered for about 5 minutes, until the whites are completely set but the yolks are still runny. If you prefer a firmer yolk, fry for an additional 3 minutes.
Chef's tip
Instead of cress, you can also use radish sprouts or lamb's lettuce for garnish.
