- 700 g cherries or other fruit
- 180 g fine semolina flour
- 260 g granulated sugar
- 160 g all-purpose flour
- 250 ml milk
- 20 g vanilla sugar
- 3 eggs
- 12 g baking powder
- 1 tbsp powdered sugar for sprinkling
- 1 tbsp butter for greasing
- 1 tbsp fine semolina flour for dusting
Steps
- 1Preheat the oven to 180 ºC. Grease a baking tray with butter and dust with fine semolina flour.
- 2Separate the eggs into yolks and whites. Beat the egg whites until stiff peaks form. In a stand mixer, beat the egg yolks with granulated sugar and vanilla sugar until light and fluffy. Add the two types of flour mixed with baking powder, pour in the milk, and mix until a smooth batter forms. Remove the bowl from the mixer and gently fold in the beaten egg whites by hand, gradually.
- 3Slowly pour the batter into the prepared baking tray and arrange the pitted cherries (or other fruit) on top. Place the tray in the oven and bake for about 30 minutes, or until golden brown.
- 4Before serving, sprinkle the top of the cake with powdered sugar.
- 5This recipe requires a baking tray approximately 22×28 cm. The egg whites are ready when they are stiff enough that they don't move even when the bowl is turned upside down. Beat the yolks until the mixture is very light, almost white. Grease the baking tray thoroughly, otherwise, the batter will stick and tear when serving. You can arrange the fruits densely for a juicier cake. Leave a small amount of batter without fruit only around the edges. Check for doneness with a skewer test: if a toothpick inserted into the cake comes out clean, you can remove it from the oven. Only slice when completely cooled, otherwise, the cake may collapse. It can also be made with sour cherries, strawberries, blueberries, or other berries.
