Preheat the oven to 170 °C. Line a baking tray with parchment paper.
Beat the egg yolks with half of the sugar until pale and frothy. Beat the egg whites with the remaining sugar and a pinch of salt until stiff peaks form.
Alternately add the beaten egg whites and the sifted flour to the beaten yolks in several batches. Gently fold them together with a spatula to prevent the foam from breaking.
Chef's tip
Ladyfingers are best if left to dry overnight after baking, so they can perfectly absorb coffee or cream in tiramisu.
