Preheat the oven to 180 °C (conventional top and bottom heat). Thoroughly grease an approx. 20x30 cm baking dish or pie dish with 20 g of softened butter (melt the remaining 20 g of butter for the batter).
Thoroughly wash the plums, pat them dry, cut them into halves or quarters, and remove the pits. Sprinkle them with the cinnamon or toss them together with 1 teaspoon of ground cinnamon and a tablespoon of granulated sugar taken from the measured amount.
Mixing the milk pie batter
In a mixing bowl, beat the 4 eggs with the granulated sugar, vanilla sugar, and a pinch of salt using a hand whisk or a mixer until frothy.
Chef's tip
The batter for the milk pie is quite runny, so do not worry - during baking, the eggs and flour will cause it to set into a creamy, silky texture.
Besides fresh plums, you can also use frozen plums; in this case, use them straight from the freezer without thawing, layering them directly into the baking dish.
