Preparation method

Preheat the oven to 170 °C (top and bottom heat). Clean the carrots and grate them finely.

In a bowl, beat the eggs, add the grated carrots and all other batter ingredients. Mix the mixture until smooth, then fill into muffin cases lined with paper. The given quantity is sufficient for 12 standard-sized cupcakes.

Bake in the preheated oven for 25-30 minutes. Check for doneness with a skewer. Remove from the oven and let cool completely on a wire rack.
Chef's tip
It is advisable to press the cottage cheese through a sieve before making the cream for an even silkier result.
