Preparing the bao buns

Mix the flour, yeast, and salt in a bowl, then add about 160-170 ml of lukewarm water. Knead into a smooth, elastic dough for about 8-10 minutes, then cover and let it rise at room temperature for 45-60 minutes, until doubled in size.

Divide the dough into 8 equal parts, shape them into balls, then roll them into oval shapes. Lightly brush their surface with a little oil, fold them in half, and place a small piece of baking paper under each.

Place the buns in a steamer pot or bamboo steamer and steam them over boiling water for 10-12 minutes. Do not open the lid while steaming so that the buns stay light and fluffy.

Chef's tip

If you like it even spicier, drizzle a little chili sauce into the finished bao buns or add a bit of fresh kimchi!

You can also prepare the bao buns ahead of time and freeze them: right before serving, re-steam them directly from frozen for 3-4 minutes.
