
Juicy Meatloaf in an Air Fryer with Sweet Potato Puree

- 600 g beef and pork minced meat mix
- 500 g potatoes
- 1 pc red onion
- 500 g sweet potatoes
- 3 cloves garlic
- 40 g butter
- 70 g whole wheat bread roll
- 200 ml milk
- 12 g salt
- 1 pc egg
- 1 tsp marjoram
- 1 tbsp BBQ sauce
Finely chop the red onion and press the garlic through a garlic press. Dice the bread roll and pour milk (200 ml) over it to soak well.
Mix the minced meat with the onion, garlic, soaked bread roll, salt, ground pepper, marjoram, egg, and BBQ sauce. Divide the mixture into two equal parts and, with wet hands, form two loaves. Place them in the air fryer basket and bake at 170 °C for 30 minutes.
Peel the sweet potatoes and regular potatoes, cut them into cubes, and cook until tender in salted water. Mash the cooked potatoes, add the butter and the remaining milk (100 ml), then season with salt to taste. Whip the puree until fluffy, and you can serve it alongside the baked meatloaf.
