Preparation method
Wash the sweet potatoes thoroughly in warm water, then pat them dry. Prick them in several places with a fork and place them on a baking sheet lined with parchment paper. Bake them in a preheated oven at 200°C until tender – this will take approximately 45 minutes.
While the potatoes are baking, finely chop the kale and crumble the feta cheese with a fork. Place them in a large bowl and mix with 2 tablespoons of olive oil.
Remove the baked sweet potatoes from the oven and cut a lengthwise slit on top of each one to easily scoop out the flesh. Add the scooped-out potato flesh to the feta and kale mixture. Season with salt and pepper to taste, then mix thoroughly.
