Preparation method
Preheat the oven to 200 °C.
In a pot, bring 1.5 liters of water to a boil with one tablespoon of salt. Add the cauliflower florets to the boiling water and cook for 6–7 minutes, depending on their size. Then remove them and immediately immerse them in a bowl of ice water.
Add the broccoli florets to the same boiling water and cook for 5-6 minutes. Remove the cauliflower from the ice water and replace it with the broccoli. Let it cool for 5 minutes, then drain the vegetables in a colander.
Chef's tip
Dipping vegetables in ice water (blanching) helps preserve their vibrant color and crispness.
You can also sprinkle fresh parsley on top when serving.
