Preparation method
Preheat the oven to 150 degrees Celsius (top and bottom heat). Place the taco shells in the oven and bake for about 25 minutes until crispy.
Meanwhile, prepare the mayonnaise: in a bowl, mix the egg yolks, mustard, a pinch of salt, and 1 tablespoon of lime juice. Using a hand mixer on high speed, start beating the yolks while gradually adding the sunflower oil in a thin stream. Beat for about 10 minutes until a thick mayonnaise consistency is achieved. Place in the refrigerator to cool.
In a pan, heat 2 tablespoons of olive oil, then sauté the sliced chili pepper and sliced garlic until golden brown. Add the halved cherry tomatoes and half of the coriander. Season with salt and quickly sauté for a few minutes until the tomatoes soften.
