Preparation method
Rinse the brown rice thoroughly, then cook it in twice the amount of lightly salted water. Brown rice usually takes 25-30 minutes to cook. Once done, let it stand for a few minutes, then drain off any excess water.
Season the chicken breast with salt and pepper, then cook it in a non-stick pan over medium heat until done. Cook for about 8-10 minutes per side, until it gets a nice color and is cooked through. Once done, let it rest for a few minutes, then slice it thinly.
In a deep bowl, layer the fresh salad leaves and cooked rice. Add the corn, rinsed kidney beans, sliced radishes, and grilled chicken slices.
Chef's tip
You can make the bowl even more filling with a little avocado or roasted sweet potato.
