Preparation method
PREPARING THE BACON JAM
Cut the bacon into small cubes and render its fat over medium heat. Once golden brown, remove the bacon and pour off the excess fat, leaving only about one tablespoon in the pan.
Add the finely chopped red onion and sauté until translucent, then fry until golden (about 8-10 minutes). Stir in the sugar, maple syrup, balsamic glaze, mustard, pepper, and chipotle sauce to taste. Add a little water and cook over low heat until you get a thick, sticky jam consistency (about 10-15 minutes). Stir the fried bacon pieces back in.
PREPARING THE PEPPERY MAYONNAISE
In a small bowl, mix the mayonnaise with the Worcestershire sauce and freshly ground pepper. Let it sit for at least 10 minutes for the flavors to meld.
