
Grilled Trout with Avocado Salad

Preparation
First, thoroughly preheat the grill.
Wash the trout, pat them dry, then make 3 cuts on each side with a sharp knife. Cut one lemon into 6 slices and place them, along with the fresh thyme and rosemary, into the fish's belly cavity. Finally, season the trout with salt and pepper, and brush them with olive oil. Place the fish on the hot grill and cook for 4-5 minutes per side. After flipping them, close the grill lid to ensure the fish cooks perfectly through.
Meanwhile, prepare the salad: Peel and pit the avocado, cut it into smaller cubes, and place it in a bowl. Add the grated zest and squeezed juice of the other lemon, the finely chopped basil, the sliced spring onion, then season with salt and pepper. Mix thoroughly.
Chef's tip
If you are unsure about grilling fish directly on the grate, use a fish grilling basket, which makes flipping easier and prevents the fish from falling apart.
