Preparation method
First, peel the potatoes and cut them into sticks. Place them in a large bowl, cover with water, and let stand for 10 minutes to release the starch. Then drain the water, refill with fresh water, and let stand for another 10 minutes.
Meanwhile, preheat the oven to 180 °C, prepare a baking tray, and line it with baking paper.
Drain the water from the potatoes, dry the sticks, and spread them on the baking tray. Drizzle with 4 tablespoons of oil, season with salt, and mix thoroughly. Bake in the preheated oven for 30 minutes at 175–180 °C, then raise the temperature to 200 °C and bake for another 15–20 minutes until golden brown and crispy.
Chef's tip
The secret to perfectly crispy fries is soaking them twice and thorough drying before baking.
Do not press the meat during cooking (only at the beginning when forming) to keep it juicy!
