- 800 g cooked jasmine rice
- 3 pcs eggs
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 pcs shallots
- 1 clove garlic
- 2 pcs carrots
- 1 pc pak choi
- 2 stalks spring onions
- 1 handful fresh coriander
- 1 teaspoon sesame seeds for garnish
- 2 tablespoons sesame oil
- 1 pinch salt
- 1 pinch black pepper
Cook the rice according to the instructions on the package. For fried rice, day-old rice is best. Finely chop the shallots and garlic. Clean the carrots and pak choi, then cut them into thin, long (julienne) strips. Cut the spring onions into smaller pieces.
Heat a pan, add the sesame oil, shallots, and garlic, then sauté until translucent. Add the eggs, cook for a short time, then mix. Then add the cooked rice, fish sauce, soy sauce, and fry for 5 minutes until the rice turns brownish.
Add the carrots, pak choi, and spring onions at the end, and fry for another 2 minutes. Season with salt and pepper. Garnish the fried rice with sesame seeds and fresh coriander when serving.
