Preparation method
Preheat the oven to 200 °C. Line a baking tray with parchment paper.
Slice the tomatoes, zucchini, and onion into thin rings, then halve the rings. Wash and pat dry the chicken breasts, then make 5-6 deep (approx. 1.5 cm) crosswise incisions (Hasselback-style).
Season the meat with salt and pepper inside and out. Place a half slice of zucchini, onion, and tomato into each incision. Drizzle the prepared chicken breasts with olive oil and sprinkle with Italian seasoning.
Chef's tip
Serve with fresh basil and a light green salad or steamed rice.
