Thoroughly drain the tofu using a clean kitchen towel or paper towels, then cut it into small, approximately 1-1.5 cm cubes. Peel and finely mince the garlic. Thinly slice the chili pepper (remove the seeds if you prefer a milder taste). Trim the ends off the green beans and cut them into 3-4 cm pieces. Wash the fresh basil leaves and pluck them from the stems.

In a small bowl, whisk together the wok sauce until smooth: combine the 3 tbsp soy sauce, 1 tsp cane sugar, and 1 tsp sesame oil, then set aside for quick stir-frying.

Wok Frying and Serving

Heat a wok or deep skillet over high heat, then add 2 tbsp sunflower oil. Add the tofu cubes and fry, tossing constantly, for 4-5 minutes until they develop a nice golden brown, crispy crust on all sides. Transfer the fried tofu to a plate.

Chef's tip

The tofu will be at its crispiest if you press out the moisture thoroughly before frying and do not overcrowd the cubes in the wok.

Similar to traditional Thai street food, you can serve the dish with a crispy-edged fried egg on top of the rice.
