Ingredients

  • 200 g blueberries
  • 500 g semi-skimmed cottage cheese
  • 400 g whole wheat spelt flour
  • 20 g fine oat flakes
  • 100 g honey
  • 7 g baking powder
  • 150 g butter
  • 3 pcs eggs
  • 1 pc grated lemon zest

    Preheat the oven to 170–175 °C and prepare a baking dish (approx. 21 cm × 21 cm).

    In a large bowl, mix the flour with honey, baking powder, and room temperature butter. The resulting dough should resemble classic crumble. Spread ¾ of the dough into the baking dish and press it down evenly with your hands.

    For the cottage cheese layer, in another bowl, mix the cottage cheese with the eggs and grated lemon zest. Mix until smooth, then pour the cream over the dough in the baking dish.

    Sprinkle the blueberries over the cottage cheese cream. Add the fine oat flakes to the remaining ¼ of the dough, then crumble it over the cake.

    Place the cake in the preheated oven and bake for 45–50 minutes.

    After baking, let it cool for at least 40 minutes, then slice and serve.

    Blueberries can be replaced with other fruits, such as strawberries, raspberries, or currants, which are also excellent.
