Ingredients
- 400 g all-purpose flour
- 300 g plum jam
- 200 g butter (plus for greasing the tray)
- 200 g granulated sugar
- 15 g cocoa powder
- 12 g baking powder
- 5 g gingerbread spice mix
- 250 ml lukewarm milk
- 1 egg
- fine semolina flour for dusting the tray
Steps
- 1Preheat the oven to 180 °C. Grease a baking tray with butter and dust with fine semolina flour.
- 2Place all ingredients except the jam into a food processor and mix at medium speed for 3-4 minutes. Pour the batter into the prepared baking tray and smooth the top. Fill a piping bag with the jam and draw a diagonal lattice pattern on top of the raw batter.
- 3Place the tray in the preheated oven and bake for 20 minutes. Let the finished cake cool in the tray, then cut into slices.
- 4Tip: You can also add half a teaspoon of ground cinnamon to the batter. Instead of plum jam, you can use any other jam with a more distinct, tart flavour. The cake is ready when a toothpick inserted into the centre comes out clean.
