- 150 g edamame beans
- 10 g carrot
- 100 g red cabbage
- 200 g cucumber
- 30 g unsalted peanuts
- 10 g fresh coriander
- 43 g peanut butter
- 10 g lime juice
- 10 g soy sauce
- 10 g sesame oil
- 10 g honey
Steps
- 1Cut the carrots into thin strips, shred the red cabbage, and slice the cucumber thinly.
- 2In a bowl, whisk together the peanut butter with soy sauce, lime juice, honey, sesame oil, and water until you get a creamy dressing.
- 3In a large bowl, combine the edamame, carrots, cabbage, and cucumber.
- 4Pour the dressing over it and mix thoroughly to coat all ingredients.
- 5Roughly chop the peanuts and coriander, then sprinkle them over the salad and serve immediately.
- 6It's not a sin to sprinkle some fresh chili on top.
