  • 150 g edamame beans
  • 10 g carrot
  • 100 g red cabbage
  • 200 g cucumber
  • 30 g unsalted peanuts
  • 10 g fresh coriander
  • 43 g peanut butter
  • 10 g lime juice
  • 10 g soy sauce
  • 10 g sesame oil
  • 10 g honey

    Cut the carrots into thin strips, shred the red cabbage, and slice the cucumber thinly.

    In a bowl, whisk together the peanut butter with soy sauce, lime juice, honey, sesame oil, and water until you get a creamy dressing.

    In a large bowl, combine the edamame, carrots, cabbage, and cucumber.

    Pour the dressing over it and mix thoroughly to coat all ingredients.

    Roughly chop the peanuts and coriander, then sprinkle them over the salad and serve immediately.
