Kifli Kukták

Gazdag, melengető toszkán gabonasaláta az őszi napokra. A pergősre főtt, diós aromájú tönkölybúzaszemek (farro) tökéletesen simulnak a serpenyőben aranybarnára pirított, vajas-kakukkfüves barna csiperkegombához, amelyet a selymes modenai balzsamecet tesz ellenállhatatlanná. Friss rukkolával, pirított dióval és elegáns parmezánforgácsokkal tálalva teljes értékű, laktató főétel az olasz gasztronómia szerelmeseinek.

Preparation method

Preparing and cooking the grain

1

Rinse the farro grains thoroughly under cold running water in a fine mesh sieve. Place in a medium saucepan, cover with plenty of lightly salted water, and bring to a boil.

2

Cook over medium heat, covered, for about 20-25 minutes until the grains are pleasantly tender with a bite (al dente). Drain and let cool to lukewarm in a bowl.

Sautéing the mushrooms and dressing

1

Clean the brown button mushrooms with a damp cloth, then cut into thick wedges or quarters. Finely chop the shallots and garlic cloves.

Chef's tip

Farro keeps wonderfully in the refrigerator in an airtight container for 3-4 days, so by cooking it in advance you can prepare this filling, nutritious lunch in a matter of minutes.

If you prefer an even bolder flavor, you can top it with aged Tuscan pecorino cheese or gorgonzola instead of Parmesan!
