Preparation method
Wash the mint leaves thoroughly under running water, then drain them in a colander.
Pour the water into a saucepan, add the sugar and mint. Begin heating the mixture over low heat.
Boil the syrup for about 2 minutes. Then pour it into a bowl, cover with cling film, and let it rest in the refrigerator for a few hours until completely cooled.
Chef's tip
To achieve the perfect consistency, break up the sorbet with the tines of a fork every half hour during freezing. This helps the dessert become creamy and silky. The process takes approximately 3 hours.
