Ingredients overview
- 500 g strawberries (400 g frozen and 100 g fresh)
- 250 g semi-skimmed cottage cheese
- 60 g gluten-free oatmeal
- 20 g sliced almonds
- 2 tablespoons still water
First, prepare the strawberry sauce: place the frozen strawberries (400 g) in a small saucepan with 2 tablespoons of water, and cook over medium heat for 10–15 minutes until they break down. Then mash them with a fork and let cool for 20–30 minutes.
Meanwhile, in a non-stick pan, toast the oatmeal with the sliced almonds until golden brown, stirring constantly (approx. 3–5 minutes over medium heat).
Mix half of the cooked strawberries with the cottage cheese, then begin layering. Prepare 3 glasses of approx. 200 ml each, and layer in the following order: strawberry sauce, cottage cheese cream, toasted oatmeal with almonds. Repeat the layering once more. Finally, slice the fresh strawberries (100 g) and decorate the parfaits with them. Refrigerate for at least 15 minutes before serving.
Chef's tip
This fruit parfait is an excellent snack. If you wish to consume it for breakfast, increase the amount of oatmeal to a total of 120 grams.
