Kifli Kukták
Omlós, vajas tészta közé zárt fűszeres, fahéjas birsalmatöltelék békebeli nagymama receptje szerint. Az ősz legillatosabb házi süteménye.
Preparation method
Preparing the dough
In a bowl, mix the all-purpose flour with the baking powder, powdered sugar, and a pinch of salt, then quickly rub in the cold, cubed butter until crumbly.
Add 1 whole egg, 1 egg yolk (reserve the remaining egg white for brushing), and the sour cream, then quickly knead into a smooth, pliable dough. Divide into two equal parts, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
Making the filling
Thoroughly wash the quinces, rubbing off the fuzzy layer, cut them into quarters, remove the cores, and grate them on a coarse grater.
Chef's tip
You do not necessarily need to peel the quinces before cooking; rubbing them clean is enough, as the natural pectin in the skin helps set the filling and gives it a wonderful aroma.
Always slice the pie only once it has cooled completely, so the layers hold together neatly, and by the next day, the pastry will become even softer and more tender.
