  • 190 ml Alpro natural soy drink
  • 250 g gluten-free cake flour
  • 70 g vanilla sugar
  • 75 ml sunflower oil
  • 40 ml hot water
  • 1 vanilla pod or 1 teaspoon vanilla extract
  • 3 tablespoons sliced almonds
  • 1 pinch salt

Preheat the oven to 180 °C. Lightly grease a small cake tin or loaf pan, approximately 20 cm in diameter, with oil.

In a large bowl, combine the gluten-free flour, vanilla sugar, scraped seeds from the vanilla pod (or vanilla extract), and a pinch of salt. Pour in the soy drink, oil, and hot water. Mix everything thoroughly until smooth.

Pour the mixture into the prepared tin, sprinkle the top with sliced almonds, and bake for 40-45 minutes, or until golden brown. Check with a skewer: if it comes out clean, the cake is done.

Chef's tip

Serve with fresh berries or a scoop of vegan vanilla ice cream for an even more complete experience.
