- 150 g short-grain rice
- 400 ml coconut milk
- 4 tablespoons coconut-almond butter
- 1 handful of fresh blueberries
- Fruit for decoration, to taste
- 1 handful of coconut chips
- Milk as needed
Rinse the rice thoroughly in cold water until the water runs clear to remove excess starch. Then place it in a saucepan and pour in the coconut milk.
Cook for about 15 minutes until the rice is soft. Stir constantly and, if necessary, add a little regular milk to achieve the desired consistency. Let the rice pudding cool down.
To serve, divide the rice into bowls. Garnish with fresh blueberries, coconut chips, and other fruits. The crowning touch is the coconut-almond butter, which adds a special flavor to the dish. Due to the natural sweetness of coconut, there is no need for added sugar, but it can be sweetened with honey or maple syrup if desired.
Chef's tip
Instead of coconut-almond butter, you can also use plain almond butter mixed with a little shredded coconut.
