Measure out all ingredients. It is important that all ingredients are at room temperature before starting.
Prepare the starter: pour 3 tablespoons of lukewarm milk into a mug, add a little sugar, and crumble in the yeast. Mix in 3 tablespoons of flour to get a thick paste, then let it proof for 15 minutes.
Once the starter has risen, sift the flour into a bowl, and mix in the remaining sugar. Make a well in the center, pour in the remaining milk, one egg, and the starter. Place the diced butter (80 g) around the edge. Knead into a smooth, elastic dough, then cover and let it proof for 1 hour in a warm place.
Chef's tip
The dough may be sticky at first, but do not add more flour; instead, continue working it until it separates from the sides of the bowl. This ensures the dough's softness.
