Preparation method
Preheat the oven to 180 °C. Line a baking tray with baking paper.
Separate the eggs. In a large bowl, beat the egg whites with a pinch of salt until stiff peaks form. In another bowl, beat the egg yolks with cane sugar until pale, then add the grated lemon zest. Sift the spelt flour and cocoa powder into the egg yolks, then gently fold in the egg white foam.
Spread the batter evenly on the prepared baking tray and bake for 10–12 minutes. After baking, let it cool completely.
Chef's tip
You can also roll up the sponge cake while it's still warm using a kitchen towel; this way, it remains more flexible and won't break when filled.
