Peel the pears, remove the core, and cut them into smaller pieces. In a saucepan, mix the sugar with a little water, bring to a boil, and cook for about 2 minutes until the sugar is completely dissolved.
Add the pears, chopped rosemary, and lemon zest. Cook for another 5 minutes until the pears begin to soften and break down.
Stir in the lemon juice, let the mixture cool slightly, then blend until completely smooth. If you want an extra silky texture, pass the puree through a fine sieve.

Vodka helps prevent the sorbet from freezing rock-hard, making it easier to scoop.
