Ingredients overview
- 500 g apricots (fresh or frozen)
- 1 teaspoon vanilla extract or 1 vanilla bean
- 80 g chicory syrup or fiber syrup
- Fresh mint for garnish
For the sorbet, use well-ripened fruit. Wash and pit the apricots. Cut each apricot into eight pieces and place them in a freezer bag. Put them in the freezer and let the apricots freeze completely.
The apricots prepared this way can be used anytime to make quick sorbet. Prepare a blender, add the frozen apricots along with the vanilla extract and chicory syrup. If the mixture is too sour, add more chicory syrup to taste. Blend until smooth and serve immediately. Garnish with fresh mint.
Chef's tip
If you don't have chicory syrup, you can use date syrup or agave syrup instead.
