
Lactose-free cocoa balls with a surprise

Preparation method
Ingredients overview
- 100 g cocoa biscuits
- 60 g lactose-free cream cheese
- 10 g shredded coconut
- 10 g powdered sugar
- 8 pieces of blueberry or raspberry
Finely grind the cocoa biscuits in a food processor, or place them in a bag and crush them with a rolling pin. Mix the crushed biscuits with the lactose-free cream cheese in a bowl until you get a homogeneous mixture. Taste and, if necessary, add the powdered sugar, then mix thoroughly.
Wrap the mixture in cling film and let it rest in the refrigerator for at least 30 minutes to make it easier to shape. After resting, form small discs from the mixture, place one piece of your chosen fruit (blueberry or raspberry) in the centre of each, then carefully roll them into balls.
Roll the finished balls in shredded coconut. Before serving, return them to the refrigerator for at least 30 minutes for the flavours to meld and the balls to firm up. Consume fresh or within 24 hours.
Chef's tip
You can also use frozen raspberries, but make sure to incorporate them into the balls while still frozen, so they don't discolour the mixture.
