Preparation method
Preheat the oven to 135–140 °C. Prepare two baking sheets and line them with baking paper.
In a medium bowl, beat the 3 egg whites until stiff peaks form. Gradually add the cane sugar and continue beating until the meringue is glossy and stable. Finally, gently fold in the shredded coconut with a spatula.
Using a spoon, drop small mounds (approx. 2-3 cm in diameter) onto the baking paper-lined sheets. Bake the coconut kisses in the preheated oven for 25–30 minutes, until the edges are lightly golden brown.
Chef's tip
Before serving, dip the coconut kisses in good quality melted dark chocolate, then let it set.
