Preparation method
Prepare a water bath: pour water into a large pot, bring it to a boil, then reduce the heat to medium. Place a heatproof bowl (preferably metal) on top, which conducts heat well.
Add all ingredients to the bowl: egg yolks, coconut milk, tapioca starch, cane sugar, and the scraped seeds from the vanilla bean. Whisk the mixture with a hand whisk for about 2-3 minutes until it thickens.
Remove the pudding from the heat and let it cool for at least 20 minutes.
Chef's tip
For an even creamier texture, garnish with fresh berries or shredded coconut before serving.
