Preparing the Dough
Mix the sifted flour and powdered sugar with the salt. Add the cold butter, cut into small cubes, and quickly work it together until crumbly. Add 1-2 tablespoons of ice-cold water, one tablespoon at a time, and mix with a fork until a smooth dough forms. Work quickly so that the butter does not soften too much, this will make the dough truly tender.
Wrap the dough in cling film and let it rest in the refrigerator for at least 2 hours.
Preparing the Filling
Grind or crush the cloves and star anise in a mortar, then mix thoroughly with the plum jam.
Chef's tip
For this recipe, you will need 6 halved skewers. You can also use different cookie cutters for the center, such as a star or a heart, to suit the occasion.
