Sift the powdered sugar with the instant coffee.
Draw a 22 cm diameter circle on a baking paper, then turn it drawing-side down onto a baking tray. Preheat the oven to 180°C.
Add a pinch of salt to the egg whites and beat until stiff peaks form. While continuously beating on high speed, gradually add the powdered sugar mixed with coffee, spoon by spoon (mix thoroughly after each spoon), and finally stir in the starch and vinegar.
