Preparation method

- 1 ripe pineapple
- 200 ml orange juice
- 50 ml Metaxa
- 2 tbsp granulated sugar
- 1 cinnamon stick
- 1 handful brown sugar for coating
- 4 scoops vanilla ice cream
Preparation and Grilling
Peel the pineapple and cut it into rings of uniform thickness. Remove the hard core with a round cutter. Coat the fruit rings in brown sugar, then grill both sides until nicely caramelized.
Flambéing and Serving
In a pan, melt the granulated sugar until it turns a light caramel color. Pour in the orange juice, add the cinnamon stick, and stir until the sugar is completely dissolved. Add the grilled pineapple rings and reduce the sauce to one-third. Finally, pour in the Metaxa and carefully ignite it (flambé). Serve immediately, accompanied by a scoop of vanilla ice cream.
Chef's tip
Be very careful when flambéing, and always keep a lid handy to extinguish the flame if necessary. Use good quality, 100% orange juice for the fullest flavor experience.
