Preparation method
First, in a medium bowl, mix the spelt flour, melted butter, honey, milk, eggs, lemon zest, and a pinch of salt. The resulting batter should be smooth, similar in consistency to pancake batter. Place the bowl with the batter in the refrigerator to rest for about 30-45 minutes.
About 10 minutes before taking the batter out of the refrigerator, preheat the oven to 180 °C and prepare 6 smaller baking dishes, approximately 150 ml each.
After the resting time, remove the batter from the refrigerator. Distribute the forest fruits evenly among the prepared dishes, then pour the batter over them. Place the filled dishes in the preheated oven and bake at 170-180 °C for 30-35 minutes.
Chef's tip
Instead of forest fruits, you can use any other fruit – just cut it into small cubes. Note: This clafoutis can also be baked in a larger dish (approx. 25 cm in diameter) and portioned only after baking.
